So everyone has bad days or simply, days that make you want to stay home and not participate in the outside world for an evening. I know when I was little and I was feeling down my mom would make some dessert and give me some tea; I can tell ya...that really worked! Now that I have grown up, I make my own dessert and tea...and of course share with my mum and dad (though my mum still makes her fair share of treats for me). Here is the cure for a shitty day where you just want to feel cozy and relaxed.
Lemon Madeleine cookies:
Lemon Madeleine cookies:
1 cup plus 2 Tbsp.
flour
1/2 teaspoon baking
powder
Pinch salt
2/3 cup + 1 tablespoon butter
1/2 cup + 2 tablespoons sugar
1 tablespoon brown
sugar
1 tablespoon honey
4 eggs
Zest of 1 lemon, more to taste
Directions:
- Grease Madeleine tins and set in the freezer.
- Heat the oven 400°F/200°C.
- Sift together the flour and baking powder. Melt the butter, and stir in the sugar and honey.
- Lightly beat the eggs, and temper them into the butter mixture.
- Whisk into the flour to make a smooth batter.
- Pour into the Madeleine tins and bake until the cakes are puffed up, golden around the edges and cooked through, about 10 to 12 minutes, without opening the door during cooking.
And to go with the Madeleines....is a delicious and soothing tea:
Honey Milk Tea
Ingredients:
2 orange pekoe tea bags
1 cup boiling water
5 ice cubes (if you decide to serve it cold)
4 teaspoons sweetened condensed milk
3 teaspoons honey
5 tablespoons evaporated milk (if serving it hot)
Directions:
- Steep
the tea in hot water until the color turns dark red, about 3 to 5
minutes. Discard the tea bags (let tea cool if serving it cold).
- For serving it cold: Combine
the ice cubes, sweetened condensed milk, and honey in a glass or cocktail
shaker. Pour in the tea and mix well. (If the tea is still warm, the ice
may melt; add more ice if desired.)
- For serving it hot: Steep the tea in hot boiled water until the color turns dark red, about 3 to 5 minutes. Combine condensed milk and honey with some evaporated milk in a teapot and add the piping hot tea to the mix.
- Sip and relax!
