Saint Patrick's Day!!!

Hello! Wishing all my readers a fun, drunk and happy Saint Patrick's Day. I am going to be making a feast and drinking myself silly. I hope all you guys do as well! Here are some recipes to make today and enjoy on the holiday!





 


 Lucky Leprechaun Drink:

 Ingredients:
1 quart lime sherbet , softened
½ cup frozen limeade concentrate
2 tablespoons sugar
2 (12 ounce) cans carbonated lemon-lime beverage, chilled
1 -2 cup crushed ice

Directions:
1 In a mixing bowl, blend sherbet, limeade and sugar. Stir in soda and ice.
2 Pour into glasses. Garnish if desired.

(Can also spike with vodka)


 



Shamrock Cup Cakes:

2 1/2 cups all purpose flour
2 cups sugar
1 Tablespoon cocoa
1 teaspoon salt
1 teaspoon baking soda 
2 eggs
1 cup oil
1 cup buttermilk
1 Tablespoon vinegar
1 teaspoon vanilla
1 oz green food coloring

 Method:

  1. Preheat your oven to 350 degrees.
  2. Muffin tins, whoopie pie pans, whatever method you decide to go with.  Or be crazy like me and do them all.
  3. Lightly stir eggs in a medium bowl with whisk.  Add in remaining liquid ingredients.   Whisk until blended and sit aside.   I waited until the very end to add the food coloring, because frankly, that much food coloring terrifies me and I had to work out the courage to do it. 
  4. Pour your wet ingredients into your dry ingredients and mix on medium-high for about a minute or two until well combined and so very, very green.  Note, this is NOT the time to accidentally crank the Kitchenaid on to high.
  5. Add 1/4 cup of flour to the batter to thicken it up a bit before putting it in the cupcake pan. Pour the batter into cupcake pans
  6. Regular size cupcakes were around 16, mini cupcakes about 13
  7. Let cook for 10-15 minutes and than remove from pans.

While cooling, prepare frosting. Here is an easy recipe...


Cream Cheese Frosting

1 package of softened cream cheese 
1/4 cup softened butter
1 teaspoon vanilla extract
1 bag powdered sugar (2 lb bag)
Milk as needed
Decorations (clover sprinkles work well) 

  1. Cream together cream cheese, butter and vanilla in a bowl until smooth.   Gradually add in powdered sugar and continue mixing.   I add in milk as needed to get to the desired consistency.
  2. You can frost straight from the bowl, though I use my handy Ziploc bag to pipe on my frosting.
  3. Now Decorate to your heart’s content!
