Hello my fellow readers! Hung over as shit! Listening to 50 greatest songs of all time after a big meal. I think I would classify this as a Sunday well spent! Not excited for Monday....though I will be lining up with my friend for Mass Effect three tomorrow! Woo!
Well, those days do come when even my fridge is empty and I have to make dinner out of nearly nothing.
Today's Sunday dinner consisted of ground beef and pasta....yum!
What you need:
Ground beef
Cumin
Paprika
1 cube of mushroom bouillon (not dissolved)
Dried seaweed (shredded/crushed by hand)
Soy sauce
Red bell pepper (chopped)
Onion (chopped)
Garlic (chopped)
Eggplant (diced)
Fennel seed
How to:
1. Dice all the vegetables and put them aside
2. Mix ground beef (using your hands), spices, crushed bouillon cube, fennel seed, shredded dried seaweed...until well combined.
3. Heat a frying pan until very hot with grape seed oil, throw in half of the garlic and onions -which are chopped.Cover and let sizzle for about 20 seconds.
4. Throw in the ground beef, break it up into small bits no larger than an inch in size.
5. While beef is cooking, boil pasta in another pot.
6. While the two are cooking, heat up another pan with oil, toss in all the diced veggies. Add two teaspoons of soy sauce. Cover and let cook at medium heat for about 5 minutes, stirring occasionally.
7. To the veggies, add 5 tablespoons of water. And re-cover, letting cook for another 2 minutes. Turn off the heat.
8. When most of the water in the ground beef has evaporated, add the veggies in. Turn heat to medium and stir until well combined. Let cook at medium heat for another couple minutes.
9. Meanwhile, drain the cooked pasta, rinse with cold water until cool/cold.
10. Serve the hot ground beef over the cold pasta.
Delicious, simple, and you can be as creative as you want.
